Where I Stayed: The DOME House
I stayed at the coolest Airbnb, and trust me, it's unlike anything you've ever seen! Imagine pulling up to a futuristic dome house that’s sure to catch everyone’s eye—yep, it's that kind of place. But the real magic happens inside! This dome has four large bedrooms, three bathrooms, and an indoor heated saltwater pool that’ll make you never want to leave. The best part? You can slide open the glass doors to turn the pool area into a mix of indoor and outdoor bliss, complete with two story waterfalls and toasty heated terrazzo floors. It's perfect for a chill getaway with friends or a special trip but heads up—this spot is more for adults.
But wait, there's more! This house has everything you could possibly need during your stay. The fully equipped kitchen has all the gadgets and tools to whip up anything from a quick snack to a gourmet meal. Need to freshen up your wardrobe? There's a full laundry room, so you can pack light and keep your clothes clean without any hassle. They’ve thought of everything to make your travel life easier, so all you have to do is kick back and enjoy.
And if you’re into outdoor living, you’re in luck. There’s even a grill outside and plenty of patio seating areas, making it the perfect spot for entertaining or just relaxing under the stars taking in the mountain views.

What to Do: Embrace Adventure
Lookout Mountain Park: A scenic uphill, winding, drive led us to Lookout Mountain Park, where we marveled at panoramic views that stretched for miles. Whether you choose to drive or hike to the summit, the breathtaking views are sure to leave you in awe.
Note: there is a free parking lot at the top of the mountain
Red Rocks Amphitheater: Round two at Red Rocks, and let me tell you, it’s still as awesome as ever! Those giant red rocks are seriously breathtaking. I’m definitely adding "see a concert here" to my bucket list because it would be the ultimate experience with that view. While we were there, we decided to take on the Trading Post Trail. It’s a nice and easy 2-mile hike that winds through some of the most beautiful scenery you’ll ever see. You get up close and personal with those famous red rocks, and the best part? You even catch some cool views of downtown Denver in the distance. It's like being in the middle of nature, but you can still see the city skyline peeking through.
Note: If you are going during the Spring/Summer I recommend getting there early as it gets very warm on this open-air trail
Golden: If you're looking for a day trip filled with charm and breathtaking scenery, Golden, Colorado, is a must-visit! The streets are packed with Western history, unique shops, and stunning views. Don't miss The Denver Biscuit Co—I got the "Lola" on a French toast biscuit, and it was absolutely amazing. After indulging, take a leisurely hike along Clear Creek to soak in the mountainous beauty and walk off that biscuit!
Evergreen: A short drive from Red Rocks, Evergreen offered a serene escape amidst snow-capped mountains and glistening lakes. We indulged in Denver-style twisted crust pizza from Beau Jo's, savoring each bite as we basked in the peacefulness of Evergreen Lake.
Where to Eat: Savor the Flavors
Noisette: Our culinary journey began at Noisette, a Michelin-recommended spot known for its delectable pastries and picturesque ambiance. From perfectly brewed coffee to savory delights, it was the perfect start to our Denver adventure. I have now added stopping back for dinner to my bucket list!
Safta: Nestled in a charming area just north of the city, Safta stole our hearts with its Mediterranean delights. From falafel to charred cabbage, each dish was a culinary masterpiece that left us craving more.
Happy Camper: Located in the trendy Highland neighborhood, Happy Camper offered a fun vibe and mouthwatering fare. Don't miss the elote dip, burrata, and Nadene pizza – a treat for my foodie friends! This indoor-outdoor restaurant gives you the best of both worlds.
The Original: For breakfast on our final morning, we ventured to The Original, a charming hotel restaurant with a nostalgic diner feel. From churro bites to eggs benedict, each dish was a delightful start to the day. Also, it is conveniently located across from the Colorado Rockies if you're looking to catch a baseball game while in town.

Fox Run Cafe + Lula Rose: For a delicious start to your Denver day, head to The Fox Run Cafe near the zoo. You have to try the banana bread French toast and skillet potatoes—seriously, some of the best I've ever had! Then, pop next door to Lula Rose, a retro coffee shop, before tackling a hike or exploring the zoo.
Must-Visit Spots: Explore Denver's Charms
Hello Darling: Our favorite coffee spot was Hello Darling, where we indulged in expertly crafted lattes amidst stunning interiors. Perfect for a morning pick-me-up or a cozy workspace. Add this to your list if you're already stopping by Union Station or Confluence Park, as it's a quick and easy walk!
Confluence Park: A stroll to Confluence Park after grabbing coffee from Hello Darling offered breathtaking city views and a tranquil escape amidst lush landscapes and waterfalls. Don't miss the flagship REI store for outdoor enthusiasts!
Union Station: Vibrant and bustling, Union Station welcomed us with local vendors and, my personal favorite, the beloved Tattered Cover Bookstore. A must-visit for book lovers and urban explorers alike.
Dairy Block: A shopping and dining paradise, Dairy Block enchanted us with its charming alleyways adorned with artwork and twinkling lights. Perfect for a leisurely stroll and unique finds at local stores. This is just a short walk from Union Station and Confluence Park, very easy to do in one day!
Larimer Square: Highly recommended by locals, Larimer Square captivated us with its boutique shops and artisanal delights. Don't leave without indulging in pastries from Izzio Bakery! I tried the Raspberry Cheesecake La Roulette and am still dreaming of it do this day.
Wildlife Encounters: Nature's Finale
Before saying farewell to Denver, we embarked on one last adventure to the Rocky Mountain Arsenal National Wildlife Refuge. A sanctuary for native wildlife, it offered a glimpse into the diverse ecosystem of the region – a perfect finale to our Denver expedition.
